Iced Tea Recipe: Sencha Green Tea, Nettle & Black Spruce and homemade strawberry syrup

In this simple and tasty recipe, the herbaceous vibrancy of our Sencha Green Tea, Nettle & Black Spruce blend is enhanced by the sweet touch of a homemade strawberry syrup. This perfect match creates a thirst-quenching iced infusion that will quickly become your summer essential.

Ingredients for your iced infusion

To prepare a 1.5 L pitcher (approx. 6 cups):

  • 6 tbsp of loose leaf tea

  • 4 cups (1L) of hot water

  • Approximately 2 cups (400g) of fresh or frozen strawberries

  • 2 tbsp of cane sugar or brown sugar (optional, to taste)

  • A generous amount of ice cubes

Steps for preparing your homemade iced tea

For a pitcher

  • Steep the tea in 1 L of hot water (approx. 80°C / 175°F) for 5 minutes, then strain.

  • Meanwhile, place the strawberries in a saucepan with the cane sugar (if desired) and mash them with a fork or potato masher. If you are using frozen strawberries, let them thaw gently in the fridge overnight in a sealed bowl. Otherwise, you can put them frozen into the saucepan with a little water and cover over low heat; the steam will help them thaw.

  • Simmer over low heat for a few minutes until you get a nice syrup. If the mixture seems thick, dilute with 1 or 2 tbsp of water. Remove from heat and let cool in the fridge for a few minutes to temper.

  • Strain the strawberry syrup over your brewed tea using a fine sieve, then mix everything in a large pitcher filled with ice cubes.

  • (Optional) Add strawberry slices to the pitcher and serve immediately.

For a glass (300 ml)

For preparing a single glass, we suggest making the same amount of strawberry syrup as for a pitcher. You can easily store the rest in the fridge.

  1. Steep 1 tbsp of tea in a cup of hot water (250ml) for 5 minutes, then strain.

  2. Follow the same cooking steps for the strawberry syrup (see pitcher recipe above).

  3. In a large glass filled with ice cubes, pour the brewed tea and add 2 tbsp of your homemade strawberry syrup. Stir well.

  4. (Optional) Decorate the glass with a strawberry cut in half on the rim.

What to do with leftover syrup? Store it in a Mason jar in the fridge. It will keep for 3 to 4 days without sugar and up to 6 days if you added sugar. It will be perfect for flavoring your sparkling water, creating boreal cocktails, or simply for drizzling over a scoop of vanilla ice cream.

How long does homemade iced tea keep?

If you have any leftovers, our organic green tea and homemade strawberry syrup preparation can be kept for a maximum of 3 to 4 days in the fridge in a sealed container. It remains ready to serve at any time of the week with a few ice cubes for a refreshing touch.
