The sweetgale, also called bog myrtle, gives off delicious forest aromas that are simply incredible. It is mainly used in cooking to season soups and stews, but is also very good with any type of game meat. Its leaves are used in the production of craft beer and breweries to add a touch of flavour and lather. Obviously, we also make boreal infusions from here!

What Does Sweetgale Taste Like?

It tastes simply amazing. Its flavour oscillates between balsam fir and jasmine. We could describe it as refreshing, hoppy, slightly bitter and peppery, while being resinous. Some also find some resemblance to nutmeg. Anyway, this is really an aroma to discover!

Bayberry can be used in various ways.

Infusion: You can prepare an herbal tea by adding about one tablespoon of dried bayberry leaves or branches to a cup of hot water. Let it steep for 5 to 10 minutes, then strain and drink. This infusion is ideal for supporting respiratory health and easing tension.

Decoction: To extract more of its purifying properties, you can boil the leaves or branches of bayberry in water for 10 to 15 minutes. Strain the decoction before drinking.

Inhalation: You can also use bayberry to purify the air in your home. Add dried leaves or branches to a bowl of hot water and inhale the steam. This can help clear the airways and create a soothing atmosphere.

This plant is astringent, but beware, it is also abortive if taken in the first trimester of pregnancy. It was once used to repel insects in general as well as to make dye.
