What is Tamarack?
The tamarack, also known as the larch, is the only conifer that sheds its needles in the fall in Quebec. Rich in vitamin C, its small, flexible needles are highly valued in herbal teas. In the past, its young shoots were eaten as emergency food in the forest. Larch is used in many ways in alternative medicine. What do larch needles taste like?
There is a very mild resinous taste, a hint of sweetness and fir. Its aromas are similar to the typical "wood scent" found when entering a log cabin, the smell of freshly cut wood, or the delicate aroma of quality furniture.

It is found as far north as Canada, as it adapts very well to different types of terrain and soil, provided it is exposed to full sun. In good conditions, its growth can be very rapid and it can reach maturity in around twenty years! For comparison, spruce and fir are mature only after about sixty years.
